Asian Cooking: Quick Beef Pho

Estimated 25 minutes cooking time   | Free on Extra Easy

A lovely Vietnamese aromatic dish, this Asian gem will leave you wanting more!

The full recipe can be found in Slimming World’s Free & easy recipe book, the following is my take on the dish.

  • Beef Stock
  • Cracked Black Peppercorns
  • Fresh root ginger
  • Cinnamon stick
  • Star anise
  • Cardamon pods
  • Cloves
  • Sweetener
  • Low calorie cooking spray
  • Beef fillet
  • Rice noodles
  • Fish sauce
  • Pak choi
  • Mixed oriental mushrooms
  • Spring onions
  • Cucumber
  • Mint
  • Coriander sprigs
  • Red chili

Combine your spices together with the beef stock and bring to the boil in a large saucepan and simmer over a low heat.

Cook the noodles, drain and set aside.

Strain the stock in another pan and discard the spices. Add the fish sauce to the stock and season to your taste.

Add the Pak choi and mushrooms and simmer. Just before serving, thinly slice the beef and add to the broth.

Arrange your noodles and ladle over the broth.

Top with spring onions, cucumber, mint, coriander and chili.

This has got to be in my top five dishes, it is so tasty and makes you feel like an bonafied chef! I must admit leaving the beef fillet towards the end does this dish a world of favours and as always taking care when cutting your vegetables does make the difference. Serve with chopsticks and an ice cold beverage to add to the experience.

The texture of the dish is divine and the broth is describable, this is a perfect “show off” dish and I cannot recommend it enough. It most definitely gets the graceless seal of approval.
