Hot Berry Souffles

Do they rise or do they fall?

A delightfully light and fluffy desert for only 3 syns!

  • hot_berry_souffle_00002Low calorie cooking spray
  • caster sugar
  • mixed berries
  • 3 large egg whites
  • sweetener



Preheat your oven and spray your ramekins with low calorie cooking spray, coat the ramekins evenly with a little caster sugar, and puree the berries. Set aside.


Whisk the egg whites until you have stiff peaks and then gradually whisk in the remainder of the caster sugar and sweetener, whisk until mixture is glossy. Carefully fold in the berry pure ensuring that no air is knocked out of the egg whites, using a metal spoon will help with the marbling effect. – it’s very pretty!

Spoon the mixture into the ramekins and cook in the centre of the oven for 10 minutes, careful not to let the tops brown too much although it does create a lovely crunch as you break into the souffles. Serve straight away and be whisked off to a wonderful berry cloud land.


These souffles were heavenly and receive a fantastic graceless approved stamp.
